how likely is this true? didn't TSMC use FinFet for 3nm instead of GAA? isn't FinFet is more mature?
It's not true. If Apple was stuck on N5 for 3 years then there would be a serious N5 shortage, absolutely. The N3 delay is for HPC not SoC (Apple) so Apple will be using the N3 fabs next year.

I think it's possible for N5 for another year. A few month ago I saw similar on Nikkie News and I thought that's a Typo. But now more evidence toward that.
My guess is the rumor is true and N3 is taking longer than planned, as it jives with the official word that TSMC won't see revenue from N3 until 2023 (even though mass production will start in 2022?). That doesn't mean Apple will be stuck on N5. More likely they will use N4 - which I guess belongs to the N5 "family" but there will be some performance improvements.
